The way I see it, we’re doing this experiment because lentils are an “animal product”, which means they have been genetically modified to be a very good source of iron and calcium, not because they are rich in these nutrients themselves. The iron and calcium they contain are actually quite good for us.
I’m not sure that this is true in all cases. We know that a lot of the iron and calcium in lentils comes from the legumes that we eat, which are plant foods and therefore not genetically modified. However, iron and calcium from animal products are often contaminated with the antibiotic drug streptomycin, which we see in animal products such as beef, chicken, and milk, and also in red meat. So this is also not an iron and calcium source for everyone.
